Is it involuntary separation when an employer ends employment before date on resignation letter?

I provided more than 3-wks notice of resignation. I stated 5/31 would be my last day of employment. My employer wants 5/24 to be my last day which I contested because that would mean 1-wk of lost wages for me. Since they are ending employment earlier than the date I gave them, doesn't this then become an involuntary separation where I can file an unemployment claim against them that would probably be approved?

They claim that separating from the company is still "voluntary" they just "shortened" the time. I disagree!

I am an exempt (salaried) employee with more than 60hrs of accrued/unused PTO
