Can my employer make me work off the clock to calculate and distribute all staff tips?

This is for a job at a restaurant. This can take 30 minutes or more and I prefer that I, and other employees get paid to do these calculations. For some reason we are being asked to do it off the clock. Please let me know if this is legal and if I am protected against this.
