Can I prove my non compete was added after my termination?

I recently left a job where the non compete agreement that had previously been in the employee manual had been removed by the owner at the time I signed the manual acknowledgement. Unfortunately I don't have a copy of the entire manual or my new signature. I know that all other 30 employees did sign at that time( mine is somehow missing ). I was served a legal document with my signature from 2009 and the non compete. If necessary will I be able to prove when the non compete was recently added back into the manual from computer records? honestly I checked in the manual my last day of employment it was not there.
