To what degree can I prevent an employee from soliciting customers.

I am a mobile hairstylist who primarily markets the senior community, assisted livings and various retirement facilities. I am looking to add other stylists to my growing business.I am considering a non compete clause employment agreement to protect myself and my business. I was wondering if I am able to prevent them from competing in similar venues that I use to solicit my clients e.g.( networking meetings , senior related care industry meetings and assisted living memberships. I just wonder what is in the legal parameters.I just don't want them soliciting my clients or utilizing the same resources I use to get my business.
