Salary /Overtime?

I work for a national franchie restaurants as a salary manager. The operations guidelines call for a min 45 and a max of 55 hours per week,but I have been working 60 to 70 hours per week. I don't think I qualify as emempt
for overtime because under the definition primary duty I spend 90% of my day making, preping, cooking food. I'm the cook, dishwasher, manager, customer service rep. Do I have a case for overtime.
