Job not allowing meal breaks

I’ve recently taken a job as a bus driver. I did not join the union. Currently, routes go 8-9 hrs without lunches. I’ve been told I’m bound to the union contract (even though I am non union and didn’t sign one) which allows for no lunches. Is this true? If I am non union and didn’t sign this agreement, shouldn’t state and federal laws that allow for breaks and lunches apply to me?
