Can verbal promise by employer to not enforce non compete agreement be of any legal value?

Employer/owner destroyed my signed copy of non disclosure/non compete, after I complained about very broad non compete covenant, then promised he'd do the same with HR copy- said he never wanted it, was forced to by attorney, but now would be null and void. I cannot verify company copy was actually destroyed. Will it still be enforceable if copy still exists? Assuming so, at least of any value towards litigation? I've no plans to leave but just want peace of mind will be able to earn living if I should be terminated for whatever reason, something should happen.
