Do I have a right to products I have developed?

I work in a restaurant and during my employment I undertook steps to create in-house vinegars. This includes creating and caring for living bacteria, raising them generation to generation, feeding them, keeping them alive, etc.
This had been solely my undertaking, and an undertaking I took the initiative to put into motion.
Am I entitled to take samples of the bacteria in my vinegars to continue my work on my own?
Does the restaurant own them?
